Ingredients

– 6 tablespoons butter, room temperature

– 3/4 cup granulated sugar

– 1 large egg, room temperature

– 3/4 cup non-fat Greek yogurt

– 2 teaspoons vanilla extract

– 1 1/2 cups flour

– 1 1/2 teaspoons baking powder

– 1/2 teaspoon baking soda

– 3/4 teaspoon salt

– 5 ounces dark chocolate, chopped


Instructions

1-Preheat the oven to 425°F and line 9 muffin tins with paper liners to avoid any sticking and make cleanup a breeze.

2-Cream the butter and sugar in a mixer on high speed for about 3 minutes until it’s light and fluffy, which helps give your muffins that airy texture.

3-Beat in the egg for an additional minute to blend it smoothly into the mixture.

4-Add the Greek yogurt and vanilla extract, mixing until everything combines well for a creamy base.

5-In a separate bowl, whisk together the flour, baking powder, baking soda, and salt to evenly mix the dry ingredients.

6-Gradually add the dry ingredients to the wet mixture, stirring just until the batter starts to come together without fully incorporating it yet.

7-Fold in the chopped dark chocolate by hand until it’s evenly distributed the batter will be thick, which is normal for this recipe.

8-Scoop the batter into the muffin tins, filling just below the tops, and sprinkle the tops with extra granulated sugar for a nice crunch.

9-Bake for 5 minutes at 425°F, then reduce the oven temperature to 375°F and continue baking for 15 minutes until the muffins are golden brown and springy when touched.

10-Allow the muffins to cool for at least 5 minutes before serving to let the flavors settle.
