Ingredients

– 1 and 1/2 cups all-purpose flour

– 1/4 cup light brown sugar

– 2 teaspoons baking powder

– 2 teaspoons pumpkin pie spice

– 1 cup milk

– 1 teaspoon vanilla extract

– 1 large egg

– 1 cup pure pumpkin

– 1 cup semi-sweet chocolate chips, divided


Instructions

1-In a large bowl, whisk together the 1 and 1/2 cups all-purpose flour, 1/4 cup light brown sugar, 2 teaspoons baking powder, and 2 teaspoons pumpkin pie spice.

2-In a separate bowl, whisk together the 1 cup milk, 1 teaspoon vanilla extract, and 1 large egg.

3-Add the milk mixture to the flour mixture and stir until just combined.

4-Fold in the 1 cup pure pumpkin and then half of the 1 cup semi-sweet chocolate chips. Let the batter rest while heating the griddle to medium heat.

5-Spray the griddle with nonstick cooking spray. Using a ladle or 1/4-cup measuring cup, scoop batter onto the heated griddle. Sprinkle each pancake with a few more chocolate chips.

6-Cook the pancakes until bubbles start to form on top and the bottom is evenly browned. Flip and cook until both sides are lightly browned and chocolate is melted.

7-Remove cooked pancakes to a baking sheet and keep them warm in a 200Β°F oven while cooking the remaining batter.

8-Serve warm, optionally with maple syrup.
