Description

Ingredients

– 1 ⅓ cup plain Greek yogurt

– ¼ cup olive oil

– 1 ½ lb boneless, skinless chicken thighs or breasts

– 6 cloves garlic, minced

– 1 Tbsp smoked paprika

– 1 Tbsp dried oregano

– ½–1 tsp chili flakes (to taste)

– ½ tsp kosher salt (adjust to taste)

– tsp freshly ground black pepper

– 5 cups chopped lettuce

– ¾ cup diced avocado

– ⅓ cup chopped peperoncini peppers

– ¼ cup fresh dill, chopped

– ½ cup crumbled feta cheese

– 4–6 large flour tortillas (≈ 10-inch diameter)

– ½ cup basil pesto

– 1–2 cups tzatziki sauce, store-bought or homemade

– Lemon-garlic tahini sauce (optional garnish)

– 2 cups cooked chicken breast, shredded

– 1 cup Greek yogurt

– 1 cucumber, finely diced

– 2 cloves garlic, minced

– 2 tbsp fresh dill, chopped

– 1 tbsp fresh lemon juice

– 4 large whole wheat or gluten-free wraps

– 1 cup mixed salad greens


Instructions

First Step: Prepare the tzatziki sauce by combining Greek yogurt, minced garlic, diced cucumber, chopped dill, and lemon juice in a bowl. Mix well and refrigerate for at least 15 minutes to let the flavors meld. Customize the sauce by using dairy-free yogurt for vegan or low-fat options.

Second Step: Shred or slice the cooked chicken breast into bite-sized pieces.

Third Step: Warm the wraps in a dry skillet or microwave for 20 seconds to enhance pliability, or opt for fresh lettuce leaves as low-carb wraps.

1- Marinate the chicken: In a bowl combine yogurt, olive oil, garlic, paprika, oregano, chili flakes, salt and pepper. Add the chicken, toss to coat, and let sit 15 min at room temperature or up to overnight in the refrigerator.

2- Bake: Pre-heat oven to 425 °F (220 °C). Spread chicken on a baking sheet and bake for 25 min, or until the internal temperature reaches 165 °F (74 °C). Switch to broil for 1-2 min to lightly char the edges.

3- Slice the cooked chicken thinly.

4- Prepare the salad: In a large bowl combine lettuce, avocado, peperoncini, dill and feta.

5- Warm tortillas: Microwave each tortilla for 20 seconds.

6- Assemble each wrap: Spread pesto over the tortilla, layer the lettuce mixture, add sliced chicken, drizzle with tzatziki (and optional tahini sauce), then fold the tortilla burrito-style.

7- Serve immediately at room temperature, or wrap in foil and warm briefly in the oven. Extra tzatziki on the side is optional.

Fourth Step: Lay the wrap on a flat surface, spread a generous layer of tzatziki sauce evenly. Add a handful of mixed salad greens on top for crunch and nutrition.

Fifth Step: Distribute the shredded chicken over the greens, ensuring even coverage for every bite. Sprinkle with additional fresh herbs if desired.

Sixth Step: Carefully roll the wrap tightly, tucking in the edges to prevent filling from spilling out.
