1/2 avocado

1/2 cup mayonnaise

3-ounce chunk of cotija cheese

About 1/2 cup of cilantro (stems and leaves)

Instructions

1-First, prepare the chicken: Mix 1 pound of boneless, skinless chicken thighs with 1/2 tablespoon soy sauce, 1/2 tablespoon avocado oil, 1 clove garlic (or its alternatives), and 2 to 3 tablespoons taco seasoning in a bowl. Let it sit for a few minutes to soak up those flavors it’s like giving your chicken a quick flavor bath!

2-Cook the chicken: Heat a pan over medium heat and add the chicken mixture. Cook for about 6-8 minutes per side until it’s fully done and juicy. Keep an eye on it to avoid any burning, and flip for even cooking the aroma will have you excited already.

3-Make the avocado Aji Verde sauce: While the chicken rests, blend 1/2 avocado, 1/2 cup mayonnaise, a 3-ounce chunk of cotija cheese, about 1/2 cup of cilantro, 1 clove garlic, juice from 1 to 2 limes (around 2 tablespoons), and 2 tablespoons water until smooth. This green sauce adds a zesty kick that’s hard to resist!

4-Warm the tortillas: Heat your tortillas in a dry skillet for about 30 seconds per side to make them soft and ready for filling. Don’t skip this it’s what makes the tacos feel fresh and pliable.
