Ingredients
3 cups cooked shredded chicken (such as rotisserie chicken)
1 15-ounce can black beans, rinsed and drained
1 medium red bell pepper, diced
1 cup frozen corn or a 15-ounce can corn, drained
1 cup Greek yogurt (substitute with sour cream for a richer texture)
3/4 cup slightly runny salsa
2 tablespoons taco seasoning (blend of garlic powder, chili powder, paprika, cumin, cayenne pepper)
1–1/4 cups shredded cheese (cheddar, Colby Jack, or Mexican blend)
1 cup crushed tortilla chips or corn chips
Salt and pepper to taste
Optional toppings: shredded lettuce, diced tomatoes, diced avocado, cilantro
Instructions
1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
2. In a large bowl or directly in the baking dish, combine chicken, black beans, bell pepper, corn, salsa, Greek yogurt, taco seasoning, salt, and pepper. Mix thoroughly.
3. Cover with aluminum foil and bake for 30 minutes, or until the vegetables are softened.
4. Remove the foil, sprinkle cheese on top, and bake for an additional 5 minutes until the cheese melts.
5. Add crushed tortilla chips on top and serve with optional toppings and sides as desired.
