Ingredients
2 tablespoons olive oil
6 bone-in chicken thighs
Salt and freshly ground black pepper to taste
500 grams sliced mushrooms (cremini or white button)
3 tablespoons unsalted butter
2 cloves garlic, finely minced or sliced
1 tablespoon plain flour
1 cup chicken stock (low sodium preferred)
1 cup cream
½ cup grated Parmesan cheese
2 cups baby spinach
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
2. Sear chicken skin-side down until golden brown, about 5 minutes per side. Remove chicken and set aside.
3. In the same skillet, sauté mushrooms until soft and browned, about 5-7 minutes. Transfer mushrooms to the plate with chicken.
4. Reduce heat to medium, add butter and garlic; sauté until fragrant, about 1-2 minutes.
5. Sprinkle in flour and stir continuously for one minute to cook out raw flour taste.
6. Slowly pour in chicken stock while stirring to prevent lumps.
7. Add cream and increase heat gently to simmer. Stir in Parmesan cheese until smooth.
8. Return chicken thighs and mushrooms to skillet, lower heat, cover, and simmer 15-20 minutes until cooked through.
9. Add baby spinach, cover, and cook for 2 minutes until wilted. Stir into sauce.
10. Adjust salt and pepper if needed. Serve hot with sides like mashed potatoes or crusty bread.
