– 2 bell peppers quartered

– 1 large zucchini sliced into 1/2-inch rounds

– 2-3 cups (approximately 300-450 g) cherry tomatoes halved

– 1 cup (approximately 240 ml) tzatziki

– 1/2 cup (approximately 75 g) crumbled feta cheese

– Fresh herbs (basil, thyme, dill, parsley and mint) for garnish, chopped

– 1 cup (approximately 200 g) basmati rice

– 3/4 cup (approximately 115 g) orzo pasta

– 2-3 Tbsp pine nuts (optional)


Instructions

First Step: Prepare the Rice Pilaf: In a medium saucepan, melt 2 Tbsp butter over medium heat. Add the basmati rice, orzo, and pine nuts (if using), and toast while stirring frequently until the grains turn a light golden color and the nuts are fragrant, about 3-4 minutes.
