Ingredients

– 3 boneless skinless chicken breasts (about 1 pound) Provides the lean protein base

– 3 tablespoons olive oil Used for cooking and marinating to keep things moist

– 1 teaspoon chili powder Infuses a warm, spicy kick

– ¾ teaspoon salt (divided) Helps balance flavors, with some used in seasoning and the rest for veggies

– ½ teaspoon smoked paprika Adds a smoky depth

– ½ teaspoon onion powder Boosts the savory notes

– ½ teaspoon black pepper Provides a subtle heat

– ½ teaspoon cumin (optional) Offers an earthy touch if you want extra flavor


Instructions

1-First, slice the onion into slivers and the bell peppers into strips for even cooking.

2-In a bowl, combine 1 tablespoon of olive oil, the juice of half a lime, 1 teaspoon chili powder, ½ teaspoon smoked paprika, ½ teaspoon onion powder, ½ teaspoon black pepper, ½ teaspoon cumin (if using), and ½ teaspoon of salt.

3-Cut the 3 boneless skinless chicken breasts into strips and toss them in the spice mixture to coat well.

4-Heat 1 tablespoon of olive oil in a pan over medium-high heat. Cook half the chicken strips until just done, about 3 to 5 minutes, then remove and set aside.

5-Repeat with the remaining chicken using another tablespoon of olive oil. If soaking the onions, drain them well first.

6-Add the last tablespoon of olive oil to the pan, cook the onion slivers for 2 minutes, then add the sliced peppers and season with the remaining ¼ teaspoon salt. Cook and toss for another 2 minutes until the vegetables are hot.

7-Return the cooked chicken to the pan, mix everything well, and squeeze the remaining lime juice over the top before serving with tortillas.
