Ingredients
2 pounds ground chicken
1 large egg, beaten
1/4 cup plain or panko breadcrumbs (for mixing)
1/2 small yellow onion, finely diced
3 cloves garlic, minced
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 1/2 teaspoons salt (adjust to taste)
1/2 teaspoon ground black pepper
6 slices ham (e.g., Virginia or Black Forest ham)
6 slices Swiss cheese
3/4 cup panko breadcrumbs (for topping)
2 tablespoons melted butter (to mix with topping breadcrumbs)
For the Creamy Dijon Gravy:
3 tablespoons butter
3 tablespoons all-purpose flour
1/4 cup heavy cream
1 to 1 1/2 cups milk (skim or 1%)
1 teaspoon Worcestershire sauce (optional)
1 to 2 tablespoons Dijon mustard (to taste)
1/2 cup grated Parmesan cheese
1/4 teaspoon freshly grated nutmeg (optional)
Salt and pepper to taste
Instructions
1. Preheat oven to 350–400°F (175–200°C). Lightly grease or spray a 9×5-inch loaf pan; optionally line with parchment paper.
2. In a large bowl, combine ground chicken, beaten egg, mayonnaise, Dijon mustard, diced onion, minced garlic, Parmesan cheese, parsley, salt, pepper, and 1/4 cup breadcrumbs; mix gently but thoroughly.
3. Spread half the chicken mixture evenly into the bottom of the loaf pan.
4. Layer three slices of ham and three slices of Swiss cheese over the meat mixture; repeat the layering.
5. Spread remaining chicken mixture evenly over the layers.
6. Mix 3/4 cup panko breadcrumbs with melted butter and a pinch of salt; sprinkle evenly over the top.
7. Bake for about 25 minutes at 400°F or 60–75 minutes at 350°F. Tent with foil if topping browns too quickly.
8. Check doneness with a thermometer; internal temperature should reach 165°F (74°C). Remove and rest 10 minutes before slicing.
9. For gravy, melt butter in a saucepan over medium heat. Whisk in flour; cook 1 minute.
10. Gradually whisk in heavy cream and milk; cook 3–4 minutes until thickened.
11. Add Worcestershire sauce, Dijon mustard, Parmesan cheese, nutmeg, salt, and pepper; stir until smooth and heated.
12. Serve meatloaf slices with creamy Dijon gravy on top or on the side.
