4 boneless, skinless chicken breasts (150–180g / 5–6 oz each)
2 teaspoons olive oil or melted butter
1 ½ tablespoons brown sugar
1 teaspoon paprika (smoked or regular)
1 teaspoon dried oregano, thyme, or other herbs
½ teaspoon garlic powder
½ teaspoon salt (kosher salt preferred)
½ teaspoon freshly ground black pepper
Optional: Finely chopped parsley for garnish
Instructions
1. (Optional) Brine chicken breasts in a saltwater solution for 15 minutes to 6 hours. Rinse and pat dry.
2. Preheat oven to 425°F (220°C); use 200°C for fan ovens.
