Ingredients

– 4 medium potatoes (about 1 Β½ pounds) peeled

– 1 cup grated sharp cheddar or pepper jack cheese

– 2 tablespoons all-purpose flour

– Salt and pepper to taste

– 2-3 tablespoons melted butter or vegetable oil for frying or brushing


Instructions

1-First, cut the potatoes in half and boil them in salted water with 1 tablespoon of salt for 8-10 minutes. You want them just fork-tender so they don’t fall apart keep an eye on them to get it right. Once done, drain and cool the potatoes in cold water for about 30 minutes to make grating easier.

2-Next, grate the cooled potatoes to get around 4 cups. Mix them in a large bowl with the grated cheese and flour. Season everything with salt, pepper, and any extras like dried herbs or garlic powder for more flavor.

3-Now, shape the mixture into small cylinders using about 1.5 tablespoons per tot. If things stick, wet your hands a bit to make it smoother. For baking, line a baking sheet with parchment paper, arrange the tots, brush them with melted butter, and bake at 425Β°F (220Β°C) for 25-30 minutes until golden brown.

4-If you prefer frying, heat vegetable or canola oil until it’s sizzling, then fry the tots until golden and drain them on paper towels. The whole process takes about 30 minutes to prepare and 40 minutes to cook, totaling around 1 hour and 40 minutes. Remember, keep the potatoes semi-firm before grating for the best texture.
