Ingredients
6 to 6.5 pounds spaghetti squash
1 tablespoon olive oil
2 tablespoons butter
1.5 tablespoons minced garlic (approximately 4 cloves)
1 tablespoon flour
1 cup grated Parmesan cheese
1.25 cups shredded mozzarella cheese, divided
1.25 cups half and half
Salt and freshly ground black pepper to taste
1 tablespoon minced parsley for garnish (optional)
Instructions
1-First, preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper. Scoop out the seeds from the squash halves, then place them cut side up on the sheet. Brush the flesh with olive oil and sprinkle with salt and pepper before turning them cut side down. Roast for about 40 minutes until tender, then let cool slightly.
2-Next, shred the flesh with a fork, leaving a 1/4-inch border intact, and set aside the shredded squash strings. Return the squash shells to the baking sheet for later use. In a large sâuté pan, melt butter over medium heat and add garlic and flour, sâutéing for 1 minute.
3-Slowly whisk in the half and half and cook until thickened, then reduce heat and stir in Parmesan cheese until melted. Add more half and half if the sauce is too thick, and season with salt and pepper. Remove from heat, add the shredded squash and 3/4 cup of mozzarella cheese, tossing to coat evenly.
4-Divide the mixture among the squash shells, sprinkle the tops with the remaining 1/2 cup mozzarella, and bake for an additional 10 minutes until the cheese melts. Garnish with parsley if desired and serve warm.
