Description

🥔 Cheesy Pork and Potato Bake delivers a warm, comforting meal packed with tender pork, creamy potatoes, and melted mozzarella cheese.
🧀 This dish combines savory flavors and hearty textures, perfect for satisfying family dinners or gatherings.

Ingredients

– 3 pounds Yukon or Russet potatoes

– 1 bay leaf

– 1/2 tablespoon salt

– 3 to 5 tablespoons olive oil for pork, onion, and garlic

– 1 pound pork

– 1 tablespoon soy sauce

– 1 medium onion

– 3 cloves garlic

– 1 cup heavy whipping cream

– 1/4 cup fresh dill

– 1 tablespoon seasoning blend (herb and salt-free)

– 1 cup grated mozzarella cheese

Instructions

1-Let’s dive into making this tasty dish. Start by prepping your ingredients to make cooking smooth. Wash and peel the potatoes, cut them into large chunks, and place them in a pot with cold water. Add the bay leaf and salt, then cook for 15 minutes until fork-tender but not fully done.

2-Drain the potatoes and move them to a large bowl. Next, cut the pork into small chunks and cook it in olive oil in a large skillet for 7 to 10 minutes. Add soy sauce halfway through and remove when browned. Mince the garlic and sauté it in olive oil over medium-high heat until browned, being careful not to burn it, then transfer to a separate bowl.

3-In the same skillet, add more olive oil if needed and sauté the onion until golden brown. Preheat your oven to 350°F (175°C). In a large bowl, gently mix the cooked potatoes, sautéed onion, garlic, fresh dill, heavy whipping cream, and seasoning blend. Transfer this mixture to a large rectangular baking dish, top with the cooked pork, cover with foil, and bake for 15 minutes.

4-While it bakes, shred the mozzarella cheese. After 15 minutes, remove the foil, sprinkle the cheese on top, set the oven to broil, and broil for 2 minutes to melt the cheese. The total prep time is about 20 minutes, cook time about 40 minutes, and overall about 1 hour. This dish pairs well with pickled tomatoes for a fresh side.

5-First, preheat your oven to 180°C (350°F) and prepare all ingredients. In a large skillet, cook the diced pork over medium heat until browned and seasoned. For the next layer, sauté onions and garlic until translucent.

6-Combine the cream and half of the cheese to make a sauce. Layer everything in a baking dish and bake as described. Let it rest before serving for the best flavor. Remember, cooking times may vary based on chunk sizes, so prepare ingredients ahead.

Notes

⏲️ Cooking times vary based on size of potato and pork chunks; prepare ingredients ahead for smooth cooking.
🧂 Soy sauce combined with fresh dill creates a unique and flavorful taste.
🧀 Cheese and cream substitutions like cheddar and half-and-half work well.
🍴 For a variation, cook cubed raw potatoes with pork longer in casserole for a different texture.
