Ingredients

– 1 medium head of cauliflower, cut into florets (about 7 to 8 cups)

– 3 tablespoons of extra-virgin olive oil

– 1 1/2 teaspoons of paprika

– 3/4 teaspoon of kosher salt

– 1/2 teaspoon of cracked black pepper

– 3 to 4 minced garlic cloves

– 2 to 3 tablespoons of freshly grated Parmesan cheese

– Juice of half a lemon

– 2 tablespoons of finely chopped fresh parsley


Instructions

1-Preheat oven and prep cauliflower: First, preheat your oven to 400°F and get your cauliflower ready by cutting one medium head into florets, which gives you about 7 to 8 cups.

2-Toss with oil, garlic, and spices: Toss these with 3 tablespoons of extra-virgin olive oil, 1 1/2 teaspoons of paprika, 3/4 teaspoon of kosher salt, 1/2 teaspoon of cracked black pepper, and 3 to 4 minced garlic cloves in a large bowl.

3-Roast until golden: Next, spread the seasoned cauliflower on a baking sheet lined with parchment paper. Roast it in the oven for about 20-25 minutes until it turns golden and tender.

4-Add cheese and roast briefly: Then, sprinkle on 2 to 3 tablespoons of freshly grated Parmesan cheese and return it to the oven for another 5 minutes to melt the cheese nicely.

5-Finish with lemon and herbs: Finish by drizzling the juice of half a lemon over the top and mixing in 2 tablespoons of finely chopped fresh parsley for a fresh pop.
