Instructions

1-Preheat your oven to 350°F and prepare your ingredients by cooking 1 and 1/2 cups of quick-cooking white rice until it yields about 4 cups, then chop the onion and measure out the broccoli florets.

2-In a large skillet, melt 1/2 cup of unsalted butter over medium heat and sauté the chopped white onion and 4 cups of broccoli florets until they’re tender and fragrant.

3-In a bowl, mix the cooked rice with the sautéed onion and broccoli, then stir in 1 can of cream of chicken soup, half of the 8 ounces of processed cheese or 2 cups of shredded cheddar cheese, and 1/2 cup of milk until everything melts together smoothly.

4-Transfer the mixture to a greased 8×8-inch casserole dish, spreading it evenly, and top with the remaining cheese and 1/3 cup of crushed potato chips.
