Ingredients

– 4-5 medium cooked carrots (approximately 1.5 to 2 cups grated)

– 2 cups mozzarella cheese, finely grated

– 2 cups medium cheddar cheese, finely grated

– 3 medium to large cloves of garlic, pressed

– 1 cup real mayonnaise

– 2-3 long baguettes for serving as canapés


Instructions

1-Boil carrots: Getting started with this carrot and cheese spread is as easy as boiling water, and it only takes about 30 minutes total. First, bring a pot of water to a boil and add the carrots, then cover and boil for 12-15 minutes until they are firm-tender. This step helps keep their natural sweetness intact.

2-Grate and mix: Once the carrots are done, cool them, peel their skin, and grate them using the larger holes of a grater before placing them in a mixing bowl. Next, finely grate both the mozzarella and cheddar cheeses and add them to the bowl along with the pressed garlic and 1 cup of mayonnaise. Stir everything together well, and feel free to tweak the mayonnaise or garlic to suit your taste.

3-Serve or bake: To serve, spread about 1 tablespoon of the mixture on each baguette slice. For a warm option, bake the canapés at 350°F (175°C) for 8 minutes until the tops are golden and the cheese melts, or broil for 5 minutes for a milder garlic flavor and crisp finish.
