Instructions

1-Combine 1 cup granulated sugar and 1/4 cup water in a 3-quart heavy-bottomed pot, stirring slightly to blend and keeping the mixture in a flat, even layer without spreading up the sides.

2-Cook over medium heat, stirring only until the sugar dissolves and the mixture begins to bubble; do not stir thereafter.

3-Occasionally brush down sugar clumps from the pot edges with a spatula to prevent crystallization, without stirring the mixture.

4-Continue cooking for 8-15 minutes until the mixture thickens and turns a deep golden honey color, watching carefully to avoid burning.

5-Remove from heat and add 6 tablespoons unsalted butter cut into pieces, whisking until fully melted; the caramel will bubble rapidly.

6-Slowly pour in 1/2 cup heavy cream while whisking continuously until fully incorporated.

7-Stir in 1 teaspoon vanilla extract and a pinch of salt.

8-Let the sauce cool for 10 minutes in the pot, then transfer to a lidded glass container to cool completely; the sauce will thicken as it cools.

9-Store in the refrigerator; reheat briefly before use.
