Ingredients

– 1/4 cup (80g) light corn syrup helps keep the caramel smooth and prevents it from getting gritty.

– 1/2 cup (113g) unsalted butter adds a rich creaminess that coats the popcorn beautifully.

– 1/2 teaspoon salt balances the sweetness and enhances the overall taste.

– 1/8 teaspoon cream of tartar an optional helper that keeps the caramel from crystallizing.

– 1/2 teaspoon baking soda makes the caramel light and chewy by adding air bubbles.


Instructions

1-Preheat the oven to 200Β°F (93Β°C) and line baking sheets with silicone mats or parchment paper to keep things from sticking.

2-Place the air-popped popcorn in a large bowl or spread it evenly on the baking sheets for easy coating later.

3-In a medium saucepan over medium heat, combine the brown sugar, corn syrup, butter, salt, and cream of tartar; stir constantly until the butter melts and the mixture begins to simmer, creating a smooth base.

4-Allow the mixture to bubble for 4 minutes without stirring; if you’re using a candy thermometer, aim for 234 235Β°F (112 113Β°C) for the perfect consistency.

5-Remove the caramel from heat and immediately stir in the baking soda; watch as it froths and expands, which helps make the caramel light and chewy.

6-Pour the caramel over the popcorn and gently stir until all the popcorn is evenly coated, then spread it out evenly on the prepared baking sheets for baking.

7-Bake for 1 hour, gently stirring every 20 minutes to ensure even coating and to avoid any sogginess.

8-Cool on the baking sheets for at least 30 minutes until the caramel hardens, then break into clusters for the best snacking size.

9-Store the caramel corn in an airtight container; it will stay fresh for up to 2 weeks, making it great for meal prep or sharing.
