½ cup (about 90g) uncooked long grain white rice (brown rice can be substituted, but requires additional cooking time)
1 bay leaf
3 tablespoons brown sugar
2 tablespoons fresh chopped parsley (optional for garnish)
Optional seasonings: 1 tablespoon Worcestershire sauce, 1 teaspoon paprika, 1 teaspoon dried thyme (for added flavor depth)


Instructions

1. Heat oil in a large pot or Dutch oven over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned (about 4-5 minutes), breaking up the meat as it cooks. Drain excess fat if desired.
2. Add diced onion and minced garlic; cook for 2-3 minutes until softened.
3. Stir in chopped cabbage and carrots, cooking until the cabbage begins to soften (about 3 minutes).
4. Add beef broth, tomato sauce (or diced tomatoes), uncooked rice, bay leaf, brown sugar, and optional Worcestershire sauce, paprika, and thyme. Mix well and season with additional salt and pepper as needed.
5. Bring the soup to a boil, then reduce heat to medium-low and simmer uncovered for 25-30 minutes, or until rice and vegetables are tender. Avoid covering completely to prevent the rice from becoming mushy.
6. Remove and discard bay leaf. Garnish with fresh parsley before serving.
