Instructions

1-First: heat 1 tablespoon of olive oil in a large stockpot over medium-high heat. SautΓ© the diced white onion for about 5 minutes until it softens, then add the 3 minced garlic cloves and cook for 1-2 minutes until fragrant. Next, pour in 8 cups of vegetable or chicken stock, the roughly chopped Napa cabbage, 1 teaspoon ground ginger, and 1/4 teaspoon white pepper, stirring everything together to mix well.

2-Bring the pot to a simmer, then reduce the heat to medium, cover, and let it simmer for 10 minutes until the cabbage softens. Now, remove the lid and stir the soup in a circular motion to form a whirlpool, then slowly drizzle in the 3 whisked eggs the eggs will cook right away and turn into silky ribbons. Finally, stir in 2 teaspoons of toasted sesame oil and season with salt and more white pepper or ground ginger if you like. Serve it warm, topped with thinly sliced green onions for a fresh touch.
