Ingredients
2 tablespoons extra-virgin olive oil
1 large chopped yellow onion
1/2 teaspoon salt
1 whole butternut squash (about 3 pounds) peeled, seeded, and cubed
3 chopped garlic cloves
1 tablespoon chopped fresh sage
1/2 tablespoon minced fresh rosemary
1 teaspoon grated fresh ginger
3 to 4 cups vegetable broth

Instructions
1- Preheat oven to 400°F, then spread the cubed butternut squash on a baking sheet. Drizzle with 2 tablespoons of extra-virgin olive oil and roast for about 25 minutes until it’s tender and caramelized.
2- In a large pot, sauté 1 large chopped yellow onion in the remaining oil over medium heat until it’s soft and fragrant, about 5 minutes. Add 3 chopped garlic cloves, 1 tablespoon of chopped fresh sage, 1/2 tablespoon of minced fresh rosemary, and 1 teaspoon of grated fresh ginger, stirring for another 2 minutes.
3- Once the squash is roasted, add it to the pot along with 1/2 teaspoon of salt and 3 to 4 cups of vegetable broth. Bring everything to a boil, then reduce the heat and simmer for 10 minutes to let the flavors blend.
4- Use an immersion blender to puree the mixture until it’s smooth and creamy. If you’d like it thicker or thinner, adjust with more broth as needed.
5- Taste and season if required, then serve hot with chopped parsley, pepitas, and crusty bread for a finishing touch.
