Ingredients

– 20 pieces bone-in, skin-on chicken (a mix of drumsticks and thighs, or halved breasts on the bone)

– Vegetable oil for deep frying

– 2 x 284 ml pots buttermilk for the marinade

– 2 tbsp cider vinegar for the marinade

– 1 tbsp onion granules for the marinade

– 2 tsp dried sage for the marinade

– 2 tsp garlic granules for the marinade

– 2 tsp salt added with marinade ingredients

– 100 g crushed bacon-flavored crisps or similar for the spiced coating

– 200 g cornmeal or ground polenta for the spiced coating

– 200 g plain flour for the spiced coating

– 2 tsp salt for the spiced coating

– 2 tsp ground black pepper for the spiced coating

– 2 tsp dried sage for the spiced coating

– 2 tsp onion granules for the spiced coating

– 1 tsp garlic granules for the spiced coating

– 2 tsp sweet paprika for the spiced coating


Instructions

1-First: combine the buttermilk, cider vinegar, onion granules, dried sage, garlic granules, and 2 tsp salt to make the marinade. Coat the chicken thoroughly in the marinade using sturdy bags or a large bowl, then let it sit in the refrigerator overnight or up to 24 hours for the best tenderness. This step really brings out that buttermilk fried Frazzles chicken magic by locking in moisture and flavors.

2-Next: finely crush the bacon-flavored crisps in a food bag using a rolling pin, then add the cornmeal, flour, salt, black pepper, dried sage, onion granules, garlic granules, and sweet paprika. Fry 3-4 pieces at a time for 10-12 minutes until the chicken reaches 75°C internally, then place on wire racks to crisp up in the oven.
