Description

🐟 Butter Grilled Wahoo Steaks offer a juicy and flavorful seafood dish perfect for grilling enthusiasts.
🔥 The simple marinade of garlic, herbs, and butter enhances the mild, flaky texture for a delicious meal in under 20 minutes.

Ingredients

– 6 wahoo steaks (Panamei or equivalent)

– 1/2 cup (115 g) melted butter (preferably clarified for higher heat tolerance)

– 1/2 cup (120 ml) extra-virgin olive oil

– 6 garlic cloves, crushed or minced

– 1/3 cup (about 15 g) chopped fresh cilantro or parsley

– 2 tablespoons Cajun seafood seasoning

– Juice of 1 lemon

– Lemon wedges for garnish

– Salt and freshly ground black pepper to taste

Instructions

Preheat Grill: Get your grill to medium-high heat (around 400°F/200°C) for about 10 minutes to ensure even cooking and good searing.

Prepare Steaks: Pat dry 6 wahoo steaks using paper towels to help seasonings adhere better. Season both sides evenly with salt, pepper, and paprika.

Make Butter Mixture: In a blender or bowl, combine 1/2 cup melted butter, 1/2 cup olive oil, 6 crushed garlic cloves, 1/3 cup chopped cilantro or parsley, juice of 1 lemon, and 2 tablespoons Cajun seafood seasoning. Blend or whisk until smooth.

Brush Steaks: Generously brush both sides of each wahoo steak with the butter-herb mixture to impart flavor and moisture.

Prepare Grill Surface: Spray grill grates with nonstick cooking spray or lightly brush with vegetable oil to prevent sticking.

Grill Steaks: Place steaks on the hot grill and cook for 4 to 5 minutes per side, turning once or twice. Baste frequently with the remaining butter mixture to keep steaks moist and flavorful.

Check Doneness: The fish is done when it flakes easily with a fork, reaches an internal temperature of 145°F (63°C), and forms a slight golden crust. Avoid overcooking for best texture.

Finish and Serve: Remove steaks from grill, sprinkle with additional fresh herbs if desired, and drizzle with extra lemon juice. Serve immediately with lemon wedges for a vibrant touch.

Notes

🍴 Use a wide, thin spatula for gentle flipping to keep steaks intact.
🔥 Ensure the grill is well-preheated and lightly oiled to prevent sticking.
🧈 Frequent basting with the butter mixture keeps the fish juicy and flavorful.
