πΏ This quick and easy meal combines classic Italian flavors for a healthy and satisfying dish anyone can make.
Ingredients
2 cups fresh tomatoes (chopped)
1/4 cup fresh basil leaves (chopped)
2 to 3 garlic cloves (minced)
1/4 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
1/2 cup shredded Parmesan cheese
Kosher salt (to taste)
Freshly ground black pepper (to taste)
250 grams pasta (such as penne, spaghetti, whole grain, chickpea, or gluten-free, roughly 8–9 ounces)
Instructions
1-First, cook the pasta according to package instructions until al dente, then drain while reserving some pasta water for adjusting consistency if needed.
2-In a large bowl, mix the diced tomatoes, chopped basil, minced garlic, shredded Parmesan, olive oil, and balsamic vinegar, seasoning with salt and pepper to taste.
3-Add the hot pasta to the bowl and toss everything together for even coating.
4-Let the mixture rest for a few minutes to allow the flavors to meld and the sauce to thicken; add a bit of reserved pasta water if you prefer a looser sauce.
5-Serve immediately for the best fresh taste, optionally garnishing with extra basil or cheese.
Notes
π
Prepare the tomato and basil mixture up to two hours in advance and refrigerate to deepen flavor without sogginess.
π Use Roma tomatoes or blot watery tomatoes dry to avoid excess liquid.
π« High-quality olive oil and aged balsamic vinegar enhance the taste.
π§ Heavily salt the pasta water to properly season the pasta.
π§ Parmesan cheese can be substituted with Romano, Pecorino, or vegan alternatives.
