Ingredients

– 1 1/2 cups salted butter, softened

– 1 1/2 cups brown sugar

– 2 eggs

– 1 1/2 tablespoons vanilla extract

– 4 1/4 cups all purpose flour, divided (4 cups + 1/4 cup)

– 2 teaspoons baking soda

– 1 teaspoon baking powder

– 1 teaspoon salt

– 1/2 cup cocoa powder

– 1 1/2 cups semi sweet chocolate chips, divided (1 cup + 1/2 cup)

– 1/2 cup white chocolate chips

Instructions

1- Alright, let’s dive into making these Brookies Cookies it’s easier than you think! First, crank up your oven to 350Β°F (175Β°C) and line your baking tray with parchment paper to keep things from sticking. This step sets the stage for perfect baking without any mess.

2- Next, in a stand mixer, cream that softened butter and brown sugar for 2-3 minutes until it’s smooth and creamy don’t forget to scrape the bowl sides! Add the eggs and vanilla extract, then mix until everything combines nicely. Now, toss in 4 cups of flour, baking soda, baking powder, and salt, and mix to form a soft dough.

3- Divide the dough into two equal parts and set one aside. For the part in the mixer, add the remaining 1/4 cup flour and mix it in, followed by 1 cup of semi sweet chocolate chips. Take that out, then put the reserved dough back in the mixer. Add cocoa powder and mix on low until it’s all blended, then stir in the rest of the semi sweet chocolate chips and the white chocolate chips.

4- Scoop the dough into 1/4 cup portions for each type. Press one chocolate chip dough scoop with one brownie dough scoop to make a big ball, then break each ball in half so you get that fun mix of flavors. Rotate one half 180 degrees and press it back together firmly before placing on your baking sheets.

5- Bake for 11-14 minutes until the cookies turn golden, spread a bit, and get that crackled top. Let them cool on the sheet for 10 minutes before serving warm oh, and if you want more ideas, check out this churro cheesecake cookies recipe for another fun twist on desserts!

⏰ Adjust baking time for smaller cookies to about 7 minutes, checking frequently.
