Description

🥦 Dive into the crispiest, most flavorful broccoli salad with sweet cranberries, crunchy seeds, and smoky bacon in a creamy dressing!
🥗 Perfect potluck side or healthy lunch – quick prep, chills to perfection, loaded with veggies and vitamins for guilt-free indulgence.

Ingredients

– 8 cups broccoli florets, cut into bite-sized pieces

– 1/3 cup diced red onion

– 1/2 cup dried cranberries

– 1/4 cup sunflower seeds

– 1/2 cup bacon bits

– 1 cup mayonnaise

– 3 tablespoons apple cider vinegar

– 2 tablespoons granulated sugar

– Salt and black pepper to taste

Instructions

1-Step 1: Prepare the Broccoli Start by washing your broccoli thoroughly under cold running water. This removes any dirt, pesticides, or residue from the florets. After washing, drying the broccoli completely is crucial – any excess moisture will water down your creamy dressing and make the salad soggy. Pat the florets dry with clean paper towels or use a salad spinner for best results. Once dried, cut the broccoli into uniform bite-sized pieces, approximately 1/2-inch to 1-inch in size. Consistent sizing ensures every piece gets evenly coated with dressing and makes the salad pleasant to eat. Don’t discard the stems – you can peel and dice the tender inner portion to add to the salad or save them for another use.

2-Step 2: Make the Creamy Dressing In a medium bowl, whisk together all the dressing ingredients until smooth and well combined. Start with 1 cup of mayonnaise, add 3 tablespoons of apple cider vinegar, then sprinkle in 2 tablespoons of granulated sugar. Season with salt and black pepper to your taste, starting with about 1/4 teaspoon of each. Whisk vigorously until the sugar dissolves completely and the mixture is creamy with no lumps. Taste the dressing at this stage and adjust seasonings if needed. Some prefer a tangier dressing and add an extra splash of vinegar, while others like it slightly sweeter. This dressing comes together in just a few minutes and can even be made a day ahead.

3-Step 3: Combine the Salad Ingredients In a large mixing bowl, combine all your prepared ingredients. Add the 8 cups of bite-sized broccoli florets first, followed by 1/3 cup of diced red onion, 1/2 cup of dried cranberries, 1/4 cup of sunflower seeds, and 1/2 cup of bacon bits. The beautiful colors of green broccoli, purple-red onion, ruby cranberries, and golden seeds create a visually stunning presentation. Toss the dry ingredients gently to distribute everything evenly. This ensures each serving contains a balanced mix of all the delicious components. If you’re planning to serve this at a potluck or gathering, consider using a bowl that can go directly to the table.

4-Step 4: Dress and Toss the Salad Pour the prepared dressing over the salad mixture. Using a large spoon or spatula, gently toss everything together until all the broccoli and mix-ins are evenly coated with the creamy dressing. Take care not to mash or bruise the broccoli – use a folding motion to preserve the crisp texture. The dressing might seem like a lot initially, but remember that broccoli is quite dense and will absorb some of the dressing as it chills. Every piece should glisten with a light coating of the tangy, creamy mixture.

5-Step 5: Chill and Serve Transfer the salad to the refrigerator for at least one hour before serving. This chilling time allows the flavors to meld together beautifully and gives the broccoli a chance to absorb some of the dressing. The red onion will mellow slightly, the cranberries will plump up, and the overall flavor profile will become more cohesive. For the best results, make this salad the morning of your event or even the night before. The extra marinating time only improves the taste! Before serving, give the salad a quick toss and taste test. Adjust salt and pepper if needed. If you reserved some crispy bacon for garnish, sprinkle it on top just before serving for maximum crunch and visual appeal. This recipe serves 6-8 people as a side dish.

Notes

🥦 Wash and dry broccoli thoroughly to prevent a watery dressing.
⏰ Chill the salad for at least 1 hour – flavors get even better!
🥛 Lighten it up: Swap half the mayo for Greek yogurt and skip bacon.
