Instructions

1-Gather and Prep Your Ingredients: First, pull together all your ingredients to make the process smooth. That means chopping your veggies, like dicing the red bell pepper and green onions, and whisking the eggs with spices. Preparation takes about 10 minutes, so set everything out to avoid any last-minute rushes.

2-Cook the sausage: Heat a large nonstick skillet over medium-high heat. As directed, cook the sausage while stirring frequently for about 4 minutes until it’s browned and fragrant.

3-Cook the Fillings: Next, add the diced bell pepper, green onions, and optional spinach or kale to the skillet. Cook this mixture for 5 minutes until the peppers soften, then transfer it to a plate to keep it warm.

4-Cook the eggs: Reduce the heat to low and, in the same skillet, cook the whisked eggs for 2-3 minutes until fully cooked. Once done, transfer the eggs to a plate as well. This step ensures your fillings stay fresh and flavorful.

5-Assemble and Cook the Burritos: Wipe the skillet clean with a paper towel. Now, assemble each burrito by placing 1/8th of the sausage mixture, 1/8th of the scrambled eggs, 1 tablespoon chunky salsa, and 1 tablespoon shredded cheese onto each tortilla.
