Ingredients
– 1 tablespoon olive oil
– 2 cups chopped vegetables (such as red onion, bell pepper, mushrooms, or broccoli)
– 1 pound breakfast or Italian sausage (casing removed)
– 8 eggs
– 2 pinches of salt
– 2 teaspoons unsalted butter
– 8 burrito-size tortillas
– 2 cups shredded cheese (cheddar, Monterey Jack, pepper jack, or a combination)
Instructions
1-Cooking the Vegetables: Start by heating the 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add your 2 cups of chopped vegetables. Sauté them for about 4 minutes, stirring occasionally, until they are softened and fragrant. This step builds a flavorful base for our filling. Once done, transfer the vegetables to a bowl and set them aside.
2-Browning the Sausage: In the same skillet, add the 1 pound of casing-removed sausage. Use a wooden spoon to break the meat apart into small crumbles as it cooks. Continue cooking over medium heat until the sausage is browned and cooked through. This usually takes about 5 to 7 minutes. Once browned, add the cooked sausage to the bowl with the vegetables. Mixing the meat and veggies now allows the flavors to meld slightly.
3-Scrambling the Eggs: Give your skillet a quick wipe or rinse to remove excess grease, then return it to the stove. Add the 2 teaspoons of unsalted butter and melt it over medium-low heat. While the butter melts, crack the 8 eggs into a bowl and whisk them together with 2 pinches of salt. Pour the egg mixture into the skillet. Cook slowly, gently pushing the eggs across the pan with a spatula until they are softly scrambled. Be careful not to overcook them, as they will continue to cook slightly when mixed with the hot sausage.
4-Assembling the Burritos: Add the scrambled eggs to the bowl with the sausage and vegetables. Gently mix everything together until combined. Now it is time to wrap. Lay a burrito-size tortilla on a flat surface. Place one-eighth of the filling mixture in the center. Sprinkle 1/4 cup of your chosen shredded cheese over the filling. To fold, fold the sides of the tortilla over the filling, then fold the bottom edge up and over the filling. Roll the burrito tightly away from you, tucking the ends in as you go. Repeat this process until all eight burritos are wrapped.
5-Final Touches: You can serve the burritos immediately as they are. However, if you prefer a crispy tortilla, you can place the wrapped burritos on a baking sheet and bake them at 375°F for 5 to 10 minutes. This step melts the cheese perfectly and gives the tortilla a lovely golden crunch.
