Instructions

1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish or muffin tins.
2. In a blender or food processor, combine drained cottage cheese, eggs, sweetener, vanilla extract, lemon zest (if using), and cornstarch. Blend until smooth and creamy. For chunkier texture, whisk by hand instead.
3. Gently fold in 1 cup of berries, reserving 1/2 cup for topping.
4. Pour mixture evenly into prepared dish.
5. If using, mix oat crumble ingredients until crumbly and sprinkle evenly over batter.
