Ingredients

– 2 sheets puff pastry

– 2 cups blackberries (fresh or thawed if frozen)

– 1 tablespoon lemon juice

– 3/4 cup sugar

– 8 ounces goat cheese

– Zest of 2 lemons

– 4 teaspoons raw sugar

– 2 teaspoons fresh thyme, minced

– 1 egg


Instructions

1-Getting started: combine the blackberries, water, lemon juice, and sugar in a saucepan, then bring it to a boil and simmer for 20-30 minutes while mashing the berries until it thickens into a jam. Let that cool to room temperature while you thaw the puff pastry sheets for 20-25 minutes without unfolding them.

2-Prepare the puff pastry: Once the jam is ready, roll one sheet of puff pastry into a rectangle on a floured surface, crumble half the goat cheese evenly over it, and spread half the cooled blackberry jam on top. Cut the dough into twelve 1-inch wide horizontal strips, fold each in half lengthwise, and twist them gently before placing on a parchment-lined baking sheet. Repeat the same with the second sheet and the remaining goat cheese and jam.

3-Bake the twists: Preheat your oven to 400Β°F (204Β°C) and mix the lemon zest, raw sugar, and minced thyme in a small bowl. Whisk the egg with one tablespoon of water and brush it over the twists, then sprinkle the lemon-thyme sugar mixture on top. Bake for 16-18 minutes until they turn golden brown, and let them cool for 15-20 minutes before serving.
