Ingredients

– 3 cups fresh or frozen blackberries Provides fruity flavor and antioxidants

– 2 cups heavy cream Forms the creamy base


Instructions

1-Preheat your oven to 325°F (163°C) and set up a deep baking dish with ramekins inside for the water bath.

2-Heat the heavy cream and crushed blackberries in a saucepan over medium heat until it simmers, then let it steep for about 15 minutes to infuse the flavors.

3-In a bowl, whisk the egg yolks, granulated sugar, vanilla extract, and salt until smooth and creamy.

4-Strain the blackberry mixture to remove seeds, then slowly stir it into the egg mix to avoid curdling.

5-Pour the custard into the ramekins, add hot water to the baking dish halfway up the sides, and bake for 40 to 45 minutes until set but slightly jiggly.

6-Cool the ramekins to room temperature, then chill in the fridge for at least 2 hours.

7-Sprinkle 6-7 teaspoons of granulated sugar on top and caramelize with a torch or broiler for a crisp layer.
