🍫 These cookies and cream bites are perfect for quick desserts or festive occasions, delivering rich flavor without the oven.


Ingredients

– 250 grams spiced cookies (such as Speculoos or similar)

– 140 grams softened cream cheese

– Β½ teaspoon vanilla extract

– 340 grams white chocolate melts for coating

– Optional holiday sprinkles or reserved cookie crumbs for decoration

– Plant-based cream cheese for vegan diets

– Dark or milk chocolate as a substitute for coating


Instructions

1-Process the spiced cookies: Process the spiced cookies in a food processor until they form fine crumbs, and set aside a couple of tablespoons for garnish later.

2-Mix the cookie crumbs: Mix the cookie crumbs with the softened cream cheese and vanilla extract in a bowl until everything is fully combined and smooth.

3-Shape the mixture: Shape the mixture into 1.5-inch balls using a scoop or spoon, then roll them by hand as needed for a uniform look.

4-Chill the balls: Place the balls on wax paper and chill them in the refrigerator for one hour to firm up.

5-Melt the white chocolate melts: Melt the white chocolate melts carefully, using a microwave, double boiler, or candy melter until it’s smooth and ready for dipping.

6-Dip the chilled truffle balls: Dip the chilled truffle balls into the melted white chocolate, place them back on wax paper, and decorate right away with cookie crumbs or sprinkles before the coating sets.

Notes

🎨 Decorate truffles while chocolate coating is still wet for best adhesion.
🍢 Add a small amount of vegetable oil to white chocolate melts if they thicken for easier dipping.
🍽️ Use a cookie scoop for uniform truffle sizes, but hand-rolling works too.
