Ingredients
– 2 pounds (about 900 grams) beef chuck roast, cut into 2-inch pieces

– 2 tablespoons all-purpose flour
– 3 tablespoons olive oil, divided
– 1 large white onion, diced
– 5 cloves garlic, minced
– 8 cups beef stock, divided
– 2 sprigs fresh thyme
– 1 large bay leaf
– 12 ounces (about 340 grams) wide egg noodles
Instructions
1-Season the beef generously with salt and pepper, then toss with flour to create a nice coating for browning.
2-Brown the beef in batches using 2 tablespoons of olive oil until it’s caramelized on all sides, then set it aside for later.
3-In the remaining 1 tablespoon of olive oil, sautΓ© the diced onion until it’s softened, then add the minced garlic and cook for one minute to release its aroma.
4-Add 6 cups of beef stock, the browned beef, thyme, and bay leaf to the pot, then bring everything to a low simmer for a deep, flavorful base.
5-Cover and simmer on low heat for about 2.5 hours or until the beef shreds easily with a fork, building that tender texture everyone loves.
6-Remove the beef and shred it into bite-sized pieces; discard the bay leaf and thyme to keep things fresh and clean.
7-Add the remaining 2 cups of beef stock to the pot, bring to a boil, and cook the egg noodles until they’re al dente for the perfect chew.
8-Stir the shredded beef back into the pot, then adjust the seasoning with additional salt, pepper, or a dash of Worcestershire sauce as you prefer.
9-Serve immediately, and if you like, top with a bit of extra black pepper for that final flavor boost.
