Ingredients

– 1 ½ pounds ground beef for that rich protein base

– 2 cloves garlic, minced for a fresh, aromatic boost

– 1 teaspoon cumin adds earthy depth

– 1 teaspoon salt to balance all the flavors

– 3 cups shredded cheddar cheese (approximately 12 ounces) melts into creamy goodness

– 1 cup sour cream for a tangy, smooth finish

– 12 ounces enchilada sauce coats everything in savory goodness

– 8 flour tortillas (10-inch size) holds the filling just right


Instructions

1-Cook the ground beef, onion, chili powder, cumin, and salt in a skillet over medium heat until the beef is fully cooked and browned.

2-Add the minced garlic and cook for one more minute to bring out its flavor, then drain any excess fat if needed.

3-Remove from heat and stir in 2 cups of shredded cheddar cheese and the sour cream until everything is well combined and creamy.

4-Spread ¾ cup of enchilada sauce evenly in the bottom of a 9×13-inch baking dish to create a base.

5-Fill each of the 8 flour tortillas with about ½ cup of the beef mixture, roll them tightly with the seam side down, and place them in the baking dish.

6-Pour the remaining enchilada sauce over the top, sprinkle with 1 cup shredded cheese, and add jalapeños if you want that extra spice.

7-Bake uncovered for 12 to 15 minutes until the cheese melts and the sauce bubbles perfectly.
