Ingredients
– 1 lb (about 450 g) flank steak thinly sliced into bite-sized strips
– 2 Tbsp oil (vegetable or preferred) divided
– 1 lb (about 450 g) fresh broccoli cut into 6 cups of florets
– 2 tsp sesame seeds optional garnish
– 1 tsp fresh ginger grated
– 2 tsp garlic grated (approximately 3 cloves)
– 1/2 cup hot water (120 ml)
– 6 Tbsp soy sauce or gluten-free tamari
– 3 Tbsp packed light brown sugar
– 1 1/2 Tbsp corn starch
– 1/4 tsp black pepper
– 2 Tbsp sesame oil
Instructions
1-First, cook white rice to go with the stir fry, and freeze the steak for 30 minutes to make slicing easier before cutting it thinly against the grain. This prep work helps the beef turn out tender and flavorful.
2-Next, mix all the stir fry sauce ingredients in a bowl, stirring well to dissolve the sugar, then set it aside for later.
3-Heat 1 Tbsp oil in a skillet over medium heat and add the broccoli florets, sautéing for 4-5 minutes while partially covered. Stir occasionally until the broccoli is bright green and crisp-tender, and if you want it softer, add 2 Tbsp water before covering to steam.
4-Increase the heat to high, add the remaining 1 Tbsp oil, and cook the beef in a single layer for about 2 minutes per side until it’s done.
5-Add the stir fry sauce to the pan, reduce the heat to medium-low, and simmer for 3-4 minutes until the sauce thickens. Return the broccoli to the pan, stir everything together, and if you prefer a thinner sauce, add 1-2 Tbsp water. Serve it over the cooked rice for a complete meal that’s both hearty and quick.
