Ingredients

– 90g (6 tablespoons) unsalted butter

– 1/4 teaspoon salt

– 3 teaspoons finely chopped garlic (not minced)

– 1.5 tablespoons lemon juice (plus more to taste)

– 500g (1 lb) large raw, peeled, and deveined shrimp or prawns

– 1 teaspoon garlic powder

– 1 teaspoon smoked paprika (plain or sweet)

– 1/4 teaspoon cayenne pepper

– 1 tablespoon lemon juice (skip if cooking on the stove)

– 2 tablespoons olive oil

– 1/2 teaspoon salt

– 1/4 teaspoon pepper

– 1 lemon halved and grilled if desired

– Lemon wedges or slices

– 2 tablespoons finely chopped parsley


Instructions

1-Melt 90g (6 tablespoons) unsalted butter in a small saucepan over medium-high heat.

2-Add 3 teaspoons finely chopped garlic and 1/4 teaspoon salt to the melted butter.

3-Cook the garlic until it turns light golden brown. It’s important to finely chop the garlic rather than mince it, as this allows it to brown lightly and develop a crispy, golden texture without burning.

4-Immediately remove the saucepan from heat.

5-Stir in 1.5 tablespoons lemon juice (add more to taste if desired).

6-Set aside until the prawns are ready to be served.

7-Brush your BBQ grill with oil and preheat on high until very hot. A properly heated grill helps achieve that nice crust on the prawns.

8-If using small shrimp, skewer them using two skewers each to prevent spinning or falling through the grill. This technique is a game-changer for grilling smaller prawns!

9-Pat your 500g (1 lb) large raw, peeled, and deveined shrimp or prawns dry with paper towels. Removing excess moisture helps the seasonings stick better and promotes better searing.

10-Just before cooking, toss the prawns in a bowl with:

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (plain or sweet)
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon lemon juice (skip if cooking on the stove)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Mix well to ensure each prawn is evenly coated with the seasoning.

11-Place the seasoned prawns on the hot grill.

12-Grill for 2 minutes per side until golden and crusty.

13-Watch carefully to avoid overcooking. Prawns cook quickly, and there’s a fine line between perfectly done and rubbery.

14-Remove prawns from the grill onto a serving plate.

15-Immediately drizzle with the prepared lemon garlic butter sauce.

16-Sprinkle with 2 tablespoons finely chopped parsley.

17-Serve immediately while still hot.

18-Omit the lemon juice from the shrimp seasoning.

19-Cook shrimp in batches in a heavy-based skillet over high heat with 1-2 teaspoons oil.

20-Cook lemon butter separately in the skillet over medium-high heat.

21-Follow the same cooking times (approximately 2 minutes per side) until golden and crusty.
