Ingredients
1 pound large raw shrimp, peeled, deveined, tails removed
2 large eggs
1.5 cups panko breadcrumbs
½ cup tapioca flour or cornstarch
½ teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon onion powder
Salt and black pepper
Cooking spray
½ cup mayonnaise or light mayo
¼ cup sweet chili sauce
1 teaspoon sriracha
8 ounces coleslaw mix
¼ cup chopped cilantro
¼ cup chopped green onion
2 tablespoons mayonnaise
Juice from ½ lime
Sriracha for extra heat (optional)
Salt to taste
10 small tortillas (corn or flour)
Pico de gallo (optional)
Instructions
1. Prepare the shrimp by patting them dry. Set up three bowls: one with tapioca or cornstarch, paprika, garlic powder, onion powder, salt, and pepper; another with breadcrumbs; and the last with eggs whisked with water.
2. Dredge each shrimp in the seasoned flour, dip in the egg mixture, and coat with breadcrumbs. Place shrimp in the air fryer basket, spray lightly with oil, and cook at 390 degrees Fahrenheit for 7 minutes, flipping halfway.
3. As the shrimp cooks, mix ingredients for the bang bang sauce until smooth. Toss together slaw ingredients until combined.
4. Once cooked, toss shrimp with most of the sauce, reserving some for garnish. Warm tortillas via pan, microwave, or flame.
5. Assemble tacos with slaw, shrimp, remaining sauce, and optional pico de gallo. Garnish with cilantro and squeeze of lime juice.
