Ingredients
– 1/2 cup (1 stick) unsalted butter, room temperature
– 1 cup packed light brown sugar
– 1 large egg, room temperature
– 1 1/2 teaspoons vanilla extract or vanilla bean paste
– 1/2 teaspoon fine salt
– 1 cup all-purpose flour
– 1 cup mashed overripe banana (about 2 large bananas)
– 3/4 cup chocolate chips, chopped
Instructions
1-Preheat oven: Preheat oven to 350°F (175°C).
2-Line the pan: Line an 8×8-inch baking dish with parchment paper and spray with cooking spray.
3-Cream butter and sugar: Cream together butter and brown sugar until lighter in color, about 2 minutes.
4-Add wet ingredients: Add egg, vanilla extract, and salt, mixing until combined.
5-Add flour: Mix in flour on low speed just until combined.
6-Fold in bananas: Fold in mashed bananas until fully incorporated.
7-Fold in chocolate chips: Fold in chocolate chips, saving a few to sprinkle on top.
8-Pour batter and top: Pour batter into prepared pan and sprinkle chocolate chips on top.
9-Bake: Bake for 33-37 minutes until edges are golden brown and center is set, rotating pan halfway through.
10-Cool and cut: Let bars cool completely in the pan, then remove and cut into 16 squares using a warm, sharp knife.
