Ingredients

– 3 very ripe medium/large bananas

– 1/2 cup (8 tablespoons) unsalted butter, at room temperature

– 2 large eggs, lightly beaten

– 1 1/2 cups all-purpose flour (organic whole wheat flour can be used, or replace 1 tablespoon with ground flaxseed for a healthier twist)

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 teaspoon vanilla extract

– 1 cup walnuts, toasted and chopped (optional)

– 1/2 cup raisins (optional)


Instructions

1-Preheat: Set your oven to 350°F and prepare a loaf pan that’s about 9.25 inches long, 5.25 inches wide, and 2.75 inches deep grease it and lightly flour it to avoid sticking. If you’re adding walnuts, toast them in a pan while stirring to keep them from burning, then chop and cool them before mixing.

2-Mix wet ingredients: Cream the softened butter and sugar (or honey if you’re going healthier) until it’s smooth. Mash those ripe bananas to a chunky texture like applesauce and blend them into the mix along with the lightly beaten eggs.

3-Combine dry ingredients: In another bowl, whisk the flour, baking soda, and salt, then fold this into the wet ingredients. Don’t forget to stir in the vanilla extract, walnuts, and raisins if you choose to include them.

4-Pour and Bake: Pour the batter into your prepared pan and pop it in the oven. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean check it halfway through if you’re using a convection oven, as it might bake faster. Once done, let it cool in the pan for 10 minutes before moving it to a wire rack. This step ensures your banana bread stays moist and easy to slice.
