1 cup chopped rhubarb, pieces about 1/2 inch thick

1 cup confectioner’s sugar

2 tablespoons plus 1/2 teaspoon milk, higher fat preferred

Instructions

1-Getting ready for baked rhubarb cinnamon fritters: preheating your oven to 400°F (204°C) and greasing a baking sheet for easy release. In a large bowl, mix the dry ingredients all-purpose flour, sugar, brown sugar, baking powder, cinnamon, cardamom, and salt then cut in the cold butter until it looks like coarse crumbs. This step ensures a flaky texture that makes the fritters irresistible.

2-Next, in another bowl, whisk together the milk, egg, and vanilla extract until smooth. Add this wet mixture to the dry ingredients and stir just until combined, being careful not to overmix for that tender interior. Gently fold in the chopped rhubarb to distribute it evenly without breaking up the pieces.

3-Drop heaping 1/4 cup portions of batter onto your prepared baking sheet. Bake for 11-13 minutes until they’re golden brown on the bottom and set inside; smaller portions might only need about 8 minutes. Once done, transfer them to a wire rack to cool slightly before adding the glaze.

4-Switch the oven to broil and mix the glaze by combining confectioner’s sugar, milk, and vanilla extract. Brush the glaze over the fritters and broil for 2-4 minutes until it bubbles and turns golden. Stir the remaining milk into any leftover glaze and brush it on the warm fritters, then let it harden for a perfect finish.
