Description

🌮 Baked Creamy Chicken Taquitos deliver a deliciously cheesy and creamy filling with a satisfying crispy shell, perfect for a quick and flavorful meal.
🔥 These taquitos are baked instead of fried, making them a healthier option without sacrificing taste or texture.

Ingredients

– 3 ounces cream cheese (preferably low fat, avoid fat free)

– ¼ cup green salsa

– 1 tablespoon fresh lime juice

– ½ teaspoon cumin

– 1 teaspoon chili powder

– ½ teaspoon onion powder

– ¼ teaspoon granulated or powdered garlic

– 3 tablespoons chopped cilantro

– 2 tablespoons sliced green onions

– 2 cups shredded cooked chicken (about 10-12 ounces)

– 1 cup grated pepper jack or plain jack cheese (about 4 ounces)

– 12 soft taco-size tortillas (corn or flour)

– Kosher salt (optional)

– Cooking spray or oil

Instructions

1-First, mix the softened cream cheese with green salsa, lime juice, cumin, chili powder, onion powder, garlic, cilantro, and green onions until well combined. This creates the flavorful base for your filling.

2-Next, stir in the shredded cooked chicken and grated cheese. You can prepare this filling ahead and refrigerate it, which saves time on busy days and lets the flavors blend.

3-Preheat your oven to 425°F (220°C) and get a baking sheet ready by lining or spraying it to prevent sticking.

4-If you’re using corn tortillas, soften them by microwaving wrapped in damp paper towels for 20-30 seconds; flour tortillas can be used as is or warmed slightly for flexibility.

5-Place about ¼ cup of filling near the bottom third of each tortilla, keeping 1 inch from the edges, then roll tightly and put them seam side down on the baking sheet.

6-Lightly spray or brush each taquito with oil and sprinkle with kosher salt if you want extra flavor.

7-Bake for 15-20 minutes until the ends are golden brown and crispy, watching closely since times can vary by tortilla type. Once done, serve warm with dips like sour cream or guacamole.

Notes

🌽 Soften fresh corn tortillas well to prevent cracking when rolling.
❄️ Freeze taquitos individually flat before bagging for easy storage and reheating.
🍳 Try air frying at 350°F (175°C) for 8-10 minutes as a quick alternative to baking.
