Ingredients

– 400 g chicken cut into small bite-sized pieces (thigh, breast, or tenderloin)

– 1 tsp cumin powder

– 1 tsp garlic powder or onion powder

– 1/2 tsp cayenne pepper (adjust to taste)

– 1 tsp paprika powder

– 1/2 tsp salt and black pepper

– 1 tbsp olive oil

– 1 tbsp olive oil

– 1/2 small onion, diced (brown, white, or yellow)

– 1 garlic clove, minced

– 1 red capsicum or bell pepper, diced

– 1 green capsicum or bell pepper, diced

– 4 flour tortillas (20 cm / 8 inches)

– Olive oil spray

– 1 cup grated cheese (such as cheddar, Monterey Jack, Pepper Jack, or other melting cheese)


Instructions

1-First, mix the chicken with 1 tsp cumin powder, 1 tsp garlic powder or onion powder, 1/2 tsp cayenne pepper, 1 tsp paprika powder, 1/2 tsp salt and black pepper, and 1 tbsp olive oil in a bowl. This step seasons the meat perfectly for flavor. Heat 1 tbsp olive oil in a skillet on high heat and cook the onion and garlic for 1 minute to build a tasty base.

2-Next, add the diced red and green capsicums and cook for 2 minutes until soft, then transfer them to a bowl. Now, cook the chicken in the same skillet until it’s browned, and add it to the bowl with the vegetables. Let the filling cool down; you can cover and refrigerate it or spread it out to cool faster for better results.

3-Preheat your oven to 220Β°C (430Β°F) or 200Β°C (390Β°F) for fan/convection settings. Spray a baking tray with olive oil and heat it in the oven to get that crispy base. Divide the filling onto half of each tortilla, top with the grated cheese, then fold and gently press to seal.

4-Place the quesadillas on the hot baking tray and bake for 8 minutes. Flip them over the folded edge, press down a bit, and bake for another 8 minutes or until they’re crispy. Serve them right away for the best taste and texture, perhaps with a side like salsa for extra flair.
