– Β½ teaspoon black pepper

– ΒΌ teaspoon cayenne pepper

– 50g flour

– 2 beaten eggs

– Oil spray for cooking

– 2 tablespoons butter

– 120ml chicken stock

– 180ml double or heavy cream

– 1 heaped tablespoon Dijon mustard

– 30g freshly grated Parmesan cheese

– 2 pinches of white pepper

– Salt to taste


Instructions

1-Preheat the oven to 375Β°F (190Β°C) and prepare a baking dish by lightly greasing it.

2-Pound chicken breasts to an even thickness to ensure uniform cooking.

3-Spread a thin layer of Dijon mustard on each breast for added flavor.

4-Place a slice of ham and cheese on each breast, then roll them tightly and secure with toothpicks.

5-Coat each rolled chicken breast with oil spray, then dredge in the seasoned flour, followed by the beaten eggs, and finally the breadcrumbs.

6-Arrange the prepared chicken on the foil-lined tray with a wire rack.

7-Bake at 200Β°C (400Β°F) for 25-30 minutes until cooked through and golden.

8-For dietary adaptations, use gluten-free crumbs and vegan cheese as substitutes.
