Ingredients

– 200g plain biscuits or Graham Cracker squares for the biscuit base

– 120g melted unsalted butter for the biscuit base

– 500g softened cream cheese for the cheesecake filling

– 2 tablespoons plain flour for the cheesecake filling

– 1 teaspoon vanilla extract for the cheesecake filling

– ½ cup full-fat sour cream for the cheesecake filling

– 1½ cups caster (superfine) sugar for the cheesecake filling

– Zest of 1 lemon for the cheesecake filling

– 3 large eggs at room temperature for the cheesecake filling

– Strawberries optional for toppings

– Blueberries optional for toppings

– Raspberries optional for toppings

– Icing or powdered sugar for dusting optional for toppings


Instructions

1-Start by preheating the oven to 160°C (320°F) and prepare a 20cm (8″) springform pan with butter and parchment paper for easy release.

2-Press the biscuit crumb and butter mixture firmly into the base and sides to form a sturdy crust that holds up well during baking.

3-beat the softened cream cheese until smooth, then gradually mix in the flour, vanilla extract, sour cream, sugar, and lemon zest for an even blend.

4-Add the eggs one at a time to keep the batter from getting too airy and causing cracks.

5-Pour the batter over the crust, smooth the top, and bake for about 55 minutes until it’s lightly golden and slightly jiggly in the center.

6-After baking, turn off the oven and leave the door open to cool the cheesecake gradually, which helps prevent surface cracks.

7-Finally, refrigerate it for at least 4 hours to set fully before serving.

8-Preheat the oven and prepare the pan as described.

9-Mix and press the crust firmly.

10-Beat the cream cheese and add other filling ingredients carefully.

11-Bake and cool as instructed for the best results.

12-Chill before enjoying your creamy treat.
