– 1 sheet puff pastry Encases the brie for a golden, flaky crust.

– 2 Tbsp honey or maple syrup (optional) Extra sweetness if you want to amp up the flavor.

– 1 sprig fresh thyme (optional) Adds a fresh, herbal touch for extra depth.

– Enough sturdy crackers or crostini for serving (approximately 12-15 pieces) Perfect for dipping and scooping.

– 1 bunch red or green grapes (optional, approximately 200 g) Brings a fresh burst to balance the richness.

Instructions

1-First: preheat the oven to 375°F (190°C) and set up your workstation by lightly flouring a surface. Gather all your ingredients to keep things smooth think of it as gearing up for a fun cooking adventure! For a twist, you can also preheat to 350°F as in some quicker variations, which makes baking even faster.

2-Roll out the puff pastry sheet to smooth any folds, ensuring it will fully encase the brie wheel.

3-Place the Brie in the center, drizzle with honey, and sprinkle walnuts and rosemary on top for that sweet and nutty vibe.

4-Fold the pastry edges over the Brie, sealing it tightly use a bit of water to help it stick and trim excess for a neat look.

5-Set the wrapped Brie on a baking sheet lined with parchment paper, and brush with a beaten egg for a golden finish that crisps up beautifully.

6-Bake for 20-25 minutes until the pastry puffs up and turns golden brown the cheese inside should be melted and gooey. Alternatively, for a simpler version, bake the unwrapped wheel directly: For a 250 g wheel, bake 15 20 minutes; for 500 g, go 25 minutes at 350°F until the center is soft.

7-Let it cool for 5 minutes, then transfer to a plate. Finish by drizzling more honey or maple syrup, adding a thyme sprig, and arranging grapes around for a pop of color and freshness.

Notes

🧀 Keep the cheese at room temperature for 10‑15 minutes before baking to ensure even melt.
🍯 If using honey, drizzle it while the brie is still hot so it creates a glossy glaze.
⏲️ Avoid overbaking; the cheese should remain runny inside, not firm.
