– 6 ounces grated Gruyere cheese

– 1 large egg yolk for brushing


Instructions

1-Getting started: Begin by frying 7 slices of minced bacon in a pan until nearly crisp, then add 4 medium cloves of minced garlic and cook briefly before draining and setting aside. This base adds the smoky, garlicky flavor that makes these gougeres special.

2-Next: In a saucepan, bring 1 cup of water and one-third cup of unsalted butter pieces to a boil. Once boiling, remove from heat and stir in 1 cup of all-purpose flour until a dough ball forms and a dry film appears on the pan. Let it cool for about 5 minutes, then beat in 3 large eggs one at a time until smooth, followed by the cheese, bacon, and garlic mixture.

3-Shape the dough: Shape the dough into 1-tablespoon mounds and place them 2 inches apart on lined baking sheets. Brush the tops with a mix of 1 large egg yolk and a bit of water for a golden finish. Bake at 400°F (204°C) for 20 to 25 minutes until they’re puffed, golden, and sound hollow when tapped. The recipe yields about 35 gougeres, ready to enjoy warm.
