Ingredients

– 1 ripe avocado

– 12 oz cooked shrimp

– 1 cup fresh chunky salsa (tomato-based)

– ¼ cup red or white onion, finely chopped

– 2 tablespoons fresh cilantro, chopped (including leaves and stems)

– 1 tablespoon fresh lime juice

– ½ cup diced cucumber (hot house or English preferred)

– ½ cup chopped tomatoes

– 1 small jalapeño, deseeded and finely chopped

– Salt and black pepper to taste


Instructions

1-Prepare Ingredients: Thaw frozen shrimp fully if necessary and pat dry. Cut shrimp into bite-sized pieces. Deseed and finely chop the jalapeno, dice cucumber, tomatoes, onion, and chop cilantro. Dice the avocado last to avoid browning.

2-Combine Fresh Ingredients: In a large mixing bowl, add shrimp, jalapeno, cucumber, tomatoes, red or white onion, and cilantro.

3-Add Salsa and Lime: Pour in the chunky tomato-based salsa and fresh lime juice over the mixture. Stir gently to coat evenly.

4-Season: Generously add salt and black pepper to taste, then mix again. Adjust seasoning according to preference.

5-Add Avocado and Toss Gently: Immediately before serving, gently fold in the diced avocado or sprinkle on top to prevent browning and maintain texture.

6-Serve: Enjoy immediately with tortilla chips, or chill for 30 to 60 minutes for flavors to meld. If chilling, add avocado just before serving for best texture.
