Ingredients
5 to 6 cups fresh apricots (about 2 pounds or 30–36 apricot halves)
1 cup sugar
β cup all-purpose flour
1 teaspoon lemon juice
β teaspoon nutmeg
ΒΌ teaspoon vanilla
1 teaspoon sugar for sprinkling on top before baking
2 pie crusts (9-inch), either store-bought or homemade
Instructions
1-Wash and dry the apricots. Preheat oven to 400Β°F (204Β°C).
2-Halve the apricots and remove the seeds, measuring 5 to 6 cups of halves into a large bowl.
3-Add 1 cup sugar, β cup flour, 1 teaspoon lemon juice, β teaspoon nutmeg, and ΒΌ teaspoon vanilla to the apricots. Mix well and set aside.
4-Place one pie crust in a 9-inch pie dish.
5-Pour the apricot filling into the pie crust.
6-Cut the second crust into strips to create a lattice top by weaving them over the filling, or cover the pie fully and cut steam holes.
7-Crimp the edges to seal and lightly sprinkle 1 teaspoon sugar on top.
8-Bake for about 45 minutes until the crust is golden brown.
9-Allow the pie to cool completely before slicing to let the filling set.
