Ingredients

– 350g chopped pumpkin flesh (or canned pumpkin)

– 2 tablespoons brown sugar

– 1 teaspoon chopped fresh thyme

– 1 teaspoon pumpkin spice mix (or a blend of 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, and 1/8 teaspoon ground cloves)

– 2 tablespoons pumpkin seeds

– 2 teaspoons brown sugar for candied seeds

– 320g ready-rolled shortcrust pastry

– 1 beaten egg

– 1 tablespoon Greek yoghurt

– 1 eating apple (cored and sliced with peel on)

– 1 additional teaspoon brown sugar for sprinkling

– Fresh thyme for decoration


Instructions

1-Preheat your oven: Preheat your oven to 200Β°C and line a baking tray with parchment paper to avoid any sticky surprises.

2-Roast the pumpkin: First, place the chopped pumpkin on the tray and sprinkle it with brown sugar, pumpkin spice mix, and thyme. Roast for 15 minutes until it’s tender, then mash it and let it cool.

3-Candy the pumpkin seeds: While that’s happening, toast the pumpkin seeds in a dry pan for about 2 minutes until they pop, stir in brown sugar to make candied seeds, and let them cool before breaking them up.

4-Prepare the pastry: Next, beat the egg and mix most of it with Greek yoghurt. Roll out the pastry and spread this mixture evenly, leaving a wide border for folding.

5-Add the fillings: Add the mashed pumpkin on top, then arrange the apple slices in neat rows and sprinkle with brown sugar.

6-Form the galette: Fold the pastry edges up around the filling to form that casual galette shape, and brush the edges with the reserved egg for a golden touch.

7-Bake the galette: Bake for around 20 minutes until the pastry turns a nice golden color.

8-Finish and serve: Once it’s done, let it cool slightly before garnishing with those candied pumpkin seeds and fresh thyme. Serve it warm with vanilla ice cream or Greek yoghurt for an extra special finish.
