Ingredients

– 1/4 cup melted salted butter

– 1/2 cup vanilla-flavored Greek yogurt

– 2 whole eggs

– 1/2 cup brown sugar

– 1 teaspoon vanilla extract

– 1 cup cinnamon oat pancake mix (Kodiak Cakes)

– 1 cup chopped peeled apples (about 2 small apples)

– 2 tablespoons maple syrup

– 2 cups powdered sugar

– 1/4 cup whole milk

– 1/2 teaspoon ground cinnamon


Instructions

1-First Step: Preheat your oven to 350Β°F (175Β°C) and grease a loaf pan with butter or cooking spray. For easy removal, you can also line the pan with parchment paper, leaving some overhang on the sides to use as handles later.

2-Second Step: In a large bowl, combine the cinnamon oat pancake mix (Kodiak Cakes), ensuring there are no lumps. This creates the dry base for our bread.

3-Third Step: In a separate bowl, whisk together the melted salted butter, vanilla-flavored Greek yogurt, eggs, brown sugar, vanilla extract, and maple syrup until smooth. This mixture forms the wet ingredients that will bind our bread together and provide moisture.

4-Fourth Step: Pour the wet mixture into the dry ingredients and stir thoroughly to form a batter. Be careful not to overmix just stir until the ingredients are combined.

5-Fifth Step: Fold in the chopped peeled apples carefully to distribute them evenly throughout the batter. Gently incorporate the apples using a spatula, being mindful not to overmix, which can make the bread tough.

6-Sixth Step: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Tap the pan gently on the counter to release any air bubbles.

7-Seventh Step: For an extra crunchy texture, sprinkle a mixture of cinnamon sugar or turbinado sugar on top of the batter before baking. This creates a delightful crust that adds both texture and visual appeal.

8-Eighth Step: Bake in the preheated oven for 40 to 45 minutes or until the bread is golden brown and a toothpick inserted in the center comes out clean. If you notice the top is browning too quickly, loosely tent with aluminum foil for the last 10-15 minutes of baking.
